1) Steamed Oysters
Serves 4

Ingredients:
------------

12 Oysters in Shells
1 tablespoon (15ml) Low-Calorie Margarine
1/2 teaspoon (2ml) Lemon Juice, fresh
1/2 teaspoon (2ml) Tabasco Sauce

Instructions:
-------------

Scrub and rinse the oysters under cold running water. Place the oysters around the edge of a large microwave plate (two may go in the middle if necessary).

With the microwave on HIGH, cook for 5 to 7 minutes or until the shells open; turn the plate every 3 minutes in order for them to be cooked through.

Remove the oysters from their shells with a knife. Place them on a heated dish and keep them warm.

Meanwhile, combine the margarine, lemon juice and Tabasco sauce in a small microwave dish.

Cook on HIGH 20 to 25 seconds or until the margarine is melted. Serve with the oysters.

2) Spiced salmon
Serves 4

Ingredients:
------------

4 Salmon fillets
1 Jar fish seasoning
1/2 teaspoon (2ml) dill
1/2 teaspoon (2ml) lemon juice

Instructions:

Put the salmon fillets on a grill and brush with olive oil. Sprinkle the spices on the fillets and place under a grill.

Grill for 20 minutes until browned.

Serve with rice, potato wedges or new potatoes.

3) Tuna and pasta bake
Serves 4

Ingredients:
------------

2 cups (500ml) pasta bows or shells.
1 tin of tuna fish in brine.
1/2 cup (125ml) frozen vegetables.
1 can of tinned tomatoes.
1 clove garlic.
1 jar mixed herbs.
1 cup (250ml) grated cheddar cheese.

Instructions:
-------------

Boil the pasta until cooked. While you are doing that cook the veg and stir in the tomatoes, tuna, garlic and mixed herbs until heated through.

Stir in the pasta until it is all coated with the sauce.

Put the mixture in a casserole dish and sprinkle the grated cheese on top.

Place under the grill for 10-15 minutes until cheese is browned.
