1) Clam Dip

Serves 16

Ingredients:
------------

8 oz Cream Cheese
1/2 cup (125ml) Minced Clams
1 tablespoon (15ml) Clam Juice
1 teaspoon (5ml) Worcestershire Sauce
1 teaspoon (5ml) Lemon Juice
1/4 teaspoon (1ml) Salt

Instructions:

Combine the ingredients in a bowl and stir well.

2) Crab Dip
Serves 16

Ingredients:
------------

8 oz Cream Cheese
6 oz Crabmeat, frozen or canned
2 tablespoons (30ml) Skim Milk
1 tablespoon (15ml)Sherry Wine
2 teaspoons (10ml) Lemon Rind, fresh, grated
1 teaspoon (5ml) Horseradish, grated

3) CREAMY RANCH SALAD DRESSING
Serves 9

Ingredients:
------------

1 cup (250ml) Low-fat cottage cheese
2/3 cup (167ml) Low-fat plain yogurt
2 Green onions, chopped
1 teaspoon (5ml) Dijon mustard
1/2 teaspoon (2ml) Garlic powder
1/2 teaspoon (2ml) Dried basil
1/4 teaspoon (1ml) Dried oregano

Instructions:

In food processor or blender, mix the cottage cheese and yogurt until smooth. Pour into bowl and stir in onions and seasonings.

Cover and refrigerate for at least 30 min so flavours develop. Store for up to one week. Stir before serving.

4) TANGY BOILED DRESSING
Serves 18

Ingredients:
------------

2/3 (167ml) cup Water
1/3 (83ml) cup Cider or wine vinegar
1 Egg
1 tablespoon (15ml) flour
1 teaspoon (5ml) flour
1 teaspoon (5ml) Dry mustard
1/4 teaspoon (1ml) Salt
1 pinch Freshly ground pepper
2 teaspoons (10ml) Margarine or butter
8 teaspoons (40ml) Sweetener = to sugar

Instructions:
-------------

Beat or whisk together water, vinegar, egg, flour, mustard, salt and pepper in a heavy saucepan. Cook over medium heat, stirring constantly about 6 min until smooth and thickened. Stir in margarine and artificial sweetener. Whisk until smooth.

Pour into clean jars (eg. 1/2 cup canning jars) and mark with contents and date to use by. Store, covered, in the refrigerator up to 3 months.

5) Basic vinaigrette.
Serves 12

Ingredients:
------------
2 tablespoons (30ml) red wine vinegar
6 tablespoons (90ml) extra-virgin olive oil
2 teaspoons (10ml) Dijon mustard
Salt and pepper, to taste

Instructions:
-------------

Whisk together vinegar and mustard.

Slowly stream in oil while whisking continuously.

Taste and check for seasoning; adjust as desired.

Toss with salad greens and serve.
