1) Quorn bolognaise.
Serves 4

Ingredients:
------------

300g quorn mince
1 tin chopped tomatoes
1 red pepper
1 green pepper
1 orange pepper
1 yellow pepper
1 onion
1 teaspoon garlic puree
1/2 teaspoon mixed herbs
300g spaghetti or pasta tubes
1 tablespoon olive oil

Instructions:
-------------

Cook the pasta/spaghetti to the packs instructions.

In the meantime chop the onions and gently fry. Add the quorn and stir. Chop up the peppers and add them to the mix. Simmer for 10-15 minutes. Add the tomatoes, garlic and mixed herbs and simmer for a further 10-15 minutes.

Serve with a green salad and some Parmesan cheese.

2) Vegetable lasagne.
Serves 4

Ingredients:
------------

For the filling

150g lasagne sheets
1 tin chopped tomatoes
1 onion
1 carrot
1 courgette
1 orange pepper
1 broccoli floret
1 teaspoon garlic puree
1/2 teaspoon mixed herbs
1/2 teaspoon basil
1 tablespoon olive oil

For the cheese sauce

25g butter
25g flour
1/2 pint milk
100g grated cheese

Instructions:

Preheat oven to 200 degrees.

Chop up all the vegetables and fry with the olive oil, garlic and herbs for 5 minutes or until the onion is softened. Stir in the tomatoes and simmer for 15 minutes.

To make the cheese sauce: Melt the butter in a saucepan and stir in the flour until it resembles a paste. Add the milk bit by bit until the paste is all stirred in. Keep stirring until the sauce thickens. After that stir in the grated cheese until it has all melted in.

Get a casserole dish and put a thin layer of the vegetable mix on the bottom. Top with a layer of the lasagne sheets and put some of the cheese sauce on top. Repeat until the dish is full. Top with grated cheese and bake in the oven for 20 minutes.

3) Egg Fried Rice
Serves 2

Ingredients:
------------

2 cups rice
1 onion a little bit over a golf ball
2 medium sized green chili peppers
1 teaspoon ginger paste
1 teaspoon garlic paste
1/4 teaspoon spices (that ratio goes like 1/2 stick of cinnamon : 3 cardamon : 6 cloves)
1 teaspoon salt
2 eggs, beaten

Instructions:
-------------

First cook rice and keep it aside. Then saute the onions and green chilies together.
Add the ginger and garlic paste to the rice and mix everything well.

Add the salt and the spices powder and the beaten eggs.

Cook until everything is mixed well.
